  • 2 cups shredded, cooked chicken
  • 1 (10 ounce) can of diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 8 ounces cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 flour or corn tortillas
  • 1/2 cup vegetable oil
  • For serving:
    • Queso dip
    • Refried beans
    • Fresh cilantro

Method

  1. In a large bowl, I combine the shredded chicken, drained diced tomatoes with green chilies, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper, mixing well.

  2. I take about 1/4 cup of this mixture and place it on each tortilla, then roll them tightly.

  3. In a large skillet, I heat the vegetable oil on medium-low. I add the taquitos seam-side down, cooking for 2-3 minutes on each side until they turn golden brown and crisp.

  4. After cooking, I transfer the taquitos to a plate lined with paper towels to absorb any extra oil.

  5. For a nice touch, I spread refried beans in a bowl, pour warm queso over them, and nest the taquitos on top. I finish with diced tomatoes and fresh cilantro for garnish.
