Chicken Taquitos with Queso have quickly become a staple in my kitchen. The combination of flavors is truly delightful, thanks to the addition of diced tomatoes and green chilies, which introduce a fresh taste and a gentle warmth to the filling.
These taquitos are not only flavorful but also incredibly easy to prepare, making them perfect for any occasion, whether it's a casual weeknight meal or a gathering with friends. I find that they are a hit every time, and I am excited to share how simple they are to make.
In a large bowl, I combine the shredded chicken, drained diced tomatoes with green chilies, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper, mixing well.
I take about 1/4 cup of this mixture and place it on each tortilla, then roll them tightly.
In a large skillet, I heat the vegetable oil on medium-low. I add the taquitos seam-side down, cooking for 2-3 minutes on each side until they turn golden brown and crisp.
After cooking, I transfer the taquitos to a plate lined with paper towels to absorb any extra oil.
For a nice touch, I spread refried beans in a bowl, pour warm queso over them, and nest the taquitos on top. I finish with diced tomatoes and fresh cilantro for garnish.
